Curried Roasted Garbanzo Beans

A flavorful snack alternative when you are after a crunchy savory nosh. Experiment with your favorite seasonings  – or keep it simple and just use a bit of oil and sea salt.  Delicious as a topper on salads, too.

Ingredients:

2 15-ounce cans of garbanzos (chickpeas), drained, rinsed, and dried*

2 tablespoons canola or olive oil

4 teaspoons curry powder

ARTICLE CONTINUES BELOW AD

1 teaspoons sea salt (or to taste)

Directions:

  1. Preheat oven to 400 degrees.
  2. Toss the chickpeas with oil, curry and salt.
  3. Spread on a large rimmed baking sheet and bake, uncovered, for 30 minutes, or until golden brown and crunchy.
  4. Remove immediately and serve warm or at room temperature.

Note: The garbanzos can be roasted up to one day ahead. Cool completely and store in an air-tight container.

*Use paper towels to extract any surface moisture from the beans before roasting.
