Hilton Waikōloa Village invites the public to an exclusive Château Montelena Wine Dinner at Kamuela Provision Company in commemoration of the 50th anniversary of the historic Judgment of Paris.

The evening — hosted by Kamuela Provision Company Chef de Cuisine Andy Nonog III and Château Montelena National Sales Director Tucker Spear on the restaurant’s oceanfront lānai — features a curated selection of acclaimed Château Montelena wines paired with an exclusive five-course menu.

Dinner celebrates the landmark 1976 Judgment of Paris, a blind wine tasting that forever changed the global wine industry. Château Montelena’s 1973 Chardonnay outscored some of France’s most celebrated white wines in a stunning upset, proving that California wines could compete on the world stage.

It also helped establish Napa Valley as one of the world’s premier wine regions.

A curated selection of Château Montelena wines will be paired with Nonog’s exclusive menu, highlighting seasonal, locally inspired ingredients while blending award-winning wines and storytelling into an immersive dining experience overlooking the Kohala Coast.

The menu includes:

  • First course: Kampachi Thai crudo with passionfruit tiger’s milk, cucumber, mango, green papaya and cilantro oil.
    • Paired with Schramsberg Blanc de Blancs Brut 2022.
  • Second course: Honeydew and cucumber gazpacho with compressed melon, lemon oil, honey dill cucumber, chervil and watercress.
    • Paired with Château Montelena 2023 Chardonnay Napa Valley.
  • Third course: Spice cured duck breast with charred orange preserve, lemon preserve, kabocha purée, poi lion’s mane fritter and chocolate à la cola.
    • Paired with Château Montelena 2022 Cabernet Sauvignon Napa Valley.
  • Fourth course: Kiawe smoked venison with goat cheese cream, mushroom parfait, baby beets and Asian pear salsa.
    • Paired with Château Montelena 2021 Estate Cabernet Sauvignon Napa Valley.
  • Dessert: Ulu flan with biko rice cake, champorado pandan ice cream, dried fish brittle and toasted coconut.
    • Paired with Château Montelena 2019 Estate Cabernet Sauvignon Napa Valley.

Dinner guests will receive a complimentary tasting for two at Château Montelena during a future visit. Those staying the night at Hilton Waikōloa Village will also receive complimentary breakfast.

Tickets are $265 per person. Reservations can be made online.

The Château Montelena Wine Dinner is the first in a series of curated wine dinners planned at Kamuela Provision Company.
