Two Positions Appointed at Mauna Kea Beach Resort

The Mauna Kea Resort announced Thursday it has filled two new positions at the Kohala Coast resort.

Scott Main has been named the resort’s new golf maintenance director, while Polly Pagdilao has been promoted to the resorts executive sous chef.

Main has over 20 years of golf industry experience in public, private, and resort properties that include two Texas venues, Twin Creeks County Club and Barton Creek Resort & Spa. He also has experience working at the Westin Mission Hills Resort in California.

Most recently, Main left his job overseeing golf maintenance operations for three golf courses at Turning Stone Resort and Casino in New York to move to the Big Island with his wife and two children.

Main received his bachelor’s degree in agronomy and associate’s degree in turf grass management at Ohio State University.

As golf maintenance director, Main will be responsible for the direct oversight of staff and maintenance operations at both the Mauna Kea Golf Course and the Hapuna Golf Course.

Pagdilao began his culinary journey more than 30 years ago in Mauna Kea Beach Hotel’s stewarding department.

Over the years, Pagdilao has risen through the kitchen ranks at both the Mauna Kea Beach Hotel and Hapuna Beach Hotel with experience covering pastry, garden manger, banquets, and the main kitchen.

Pagdilao has a passion for creating unique dishes and a drive to mentor a younger generation of chefs, passing down rich culinary traditions of the hotel.

With his new role, Pagdilao, under the direction of Executive Chef Hans Lentz, will plan and direct food preparation, supervise kitchen staff, and assist with menu development for the hotel’s four dining outlets, as well as room service.
