These are delicious simply tossed with olive oil and sea salt and roasted until crisp. If your potatoes are small, consider dicing them instead of cutting into strips – the results will be equally tasty! Also, they may be pale in color when you first peel them, but they will turn a rich deep purple as they cook.
2 large purple Okinawa sweet potatoes
1 tablespoon olive oil
salt and pepper for seasoning
- Peel potatoes. Slice into strips.
- Toss with olive oil, salt, and pepper.
- Roast on a rimmed baking sheet at 425 degrees for 15-20 minutes or until lightly browned and crisp.
Prep time: 10 minutes
Cook time: 15-20 minutes (longer for large plank style fries)
