RECIPE: Roasted Purple Okinawa Sweet Potato Fries

These are delicious simply tossed with olive oil and sea salt and roasted until crisp.  If your potatoes are small, consider dicing them instead of cutting into strips – the results will be equally tasty!  Also, they may be pale in color when you first peel them, but they will turn a rich deep purple as they cook.

Ingredients:

2 large purple Okinawa sweet potatoes

1 tablespoon olive oil

salt and pepper for seasoning

Directions :

  1. Peel potatoes. Slice into strips.
  2. Toss with olive oil, salt, and pepper.
  3. Roast on a rimmed baking sheet at 425 degrees for 15-20 minutes or until lightly browned and crisp.

Prep time: 10 minutes

Cook time: 15-20 minutes (longer for large plank style fries)

Serves: 2
