RECIPE: Winter Orange and Avocado Salad

Local oranges on the Big Island are sweet, ripe and delicious right now. If you don’t have a tree, it’s likely your neighbor or the farmers market will have plenty!  Pair the oranges with sliced avocados and red onions in this quick and easy seasonal salad!

Yield: 2 servings.

Ingredients:

1 tablespoon olive oil

2 teaspoons white wine vinegar

3/4 teaspoon sugar

1/4 teaspoon ground cumin

Dash each paprika, curry powder, ground cinnamon and pepper

2 small navel oranges, peeled and sliced

1 medium avocado, sliced

2 slices red onion, quartered and chopped

1 tablespoon minced fresh cilantro

Directions:

  1. In a jar with a tight-fitting lid, combine the oil, vinegar, sugar, cumin, paprika, curry, cinnamon and pepper; shake well.
  2. Place oranges, avocado and onion in a shallow bowl.
  3. Drizzle with dressing; toss gently to coat.
  4. Sprinkle with cilantro.
